How to Make the Chicken Soup with Avocado
Ingredients:
1 tbsp vegetable oil
2 cloves of garlic, minced
1 white onion, small and coarsely chopped
½ jalapeño pepper, seeded and chopped
1-1/2 cups of cooked cubed Dark or White Meat Chicken
½ cup of chopped leaves of Fresh Cilantro
6 cups of packaged or homemade chicken stock
2 tbsp fresh lime juice
2 firm avocados, pitted and sliced into cubes
4 corn tortillas, cut to ½-inch size of strips, fried in hot oil, and drained with the use of paper towels
Coarse salt
Preparation:
1. Using a stockpot put in a little oil and heat this over medium heat.
2. Add the chopped jalapeño, minced garlic, and chopped onion and sauté until the onion turns translucent to about four minutes.
3. Adjust the heat to medium heat.
4. Pour the chicken stock and let it simmer for 10 minutes.
5. Put the chopped avocado, salt, cilantro, and fresh lime juice.
To serve:
1. Add the strips of tortilla to the soup bowls when serving.
2. Scoop the hot soup with tortilla strips.
3. Serve hot.
